Eastern Shore Cuisine at its Best

Cooking on the Eastern Shore of Maryland offers some of the best seasonal foods a chef could imagine. Londonderry’s chefs use the region’s famous seafood, chicken, as well as fresh fruits and vegetables in preparing memorable meals for our residents. When our residents say, “The meals you cook are just like home,” that is when we know that our dedicated culinary team has succeeded in making their dining experience pleasant and memorable – a signature of the Londonderry experience.

Each Londonderry resident participates in a monthly meal plan, which favors a “country club” plan. Lunch and dinner are available to residents six days a week, except on Sundays, when a Sunday brunch is offered. A la carte menu options are always available.

Chelsea Harris

londonderry executive chef chelsea harrisChelsea joined the Londonderry Team as Executive Chef in January 2019 where she is responsible for the community’s dining and kitchen operations. While new to Londonderry, Chelsea already values the community and sense of team work as well as the relationships with residents and staff.

Cooking and food have been part of Chelsea’s life since childhood and her favorite memories are of cooking with her mother who encouraged her to “always cook with love,” which to her means always cooking with the best fresh and nutritious ingredients. After witnessing and experiencing how poor nutrition and food choices negatively impacted many of her family members, Chelsea chose to use her talents in the kitchen to promote health and wellness.

Chelsea’s cooking philosophy is, “if you eat well, you feel well,” and her cooking is inspired by what is fresh and in season. She is an advocate for the health benefits of clean and wholesome eating and considers food to be a critical part of wellness. She believes that eating nutritious food should not be a sacrifice and is committed to working with residents to reimage their favorite dishes in a healthier way, both on the menu in the Londonderry dining room and in their kitchens at home.

Chelsea has earned certifications in Food, Nutrition and Health as well as Nutrition, Chronic Disease and Health Promotion and is passionate about using food to support the health and wellness of Londonderry’s residents. She is most appreciative of the residents’ openness to trying new things like (kombucha!) and allowing her to express her creativity on Londonderry’s menus. She is committed to setting Londonderry’s dining operations on a healthy and wholesome path

Chelsea has worked in the food industry for more than ten years. Most recently she was the Sous Chef with Blue Heron Catering where she helped supervise a staff of 20 and managed catering operations of variety of sizes ranging from small, in-home gatherings to large events of 400+ guests. She credits this experience with teaching her how to manage both a kitchen and front of the house simultaneously while staying organized and detail oriented.

Harris, an Eastern Shore native, lives in Trappe with her husband Paul, little girl Rowan, and Pug, Benny. When not in the kitchen, she enjoys being active and outdoors.

Larry and I have been at Londonderry for almost four years, and in that time, I’ve only turned on the oven twice—just to warm up leftovers! After cooking seriously for over fifty years, I decided it was time to hang up the apron. Now, we enjoy every meal in the Londonderry Dining Room. The extensive menu offers us plenty of choices every day, and we love the variety of daily specials. It’s a challenge to keep the weight off!
