Londonderry Grilled Rockfish in Foil Purses

INGREDIENTS

  • 4 Local Rockfish filets, 6-8 oz each
  • 4 teaspoons Extra Virgin Olive Oil
  • 4 Tablespoons Unsalted Butter
  • 4 Tablespoons Londonderry Spice Rub
  • 2 Lemons, sliced thin
  • 4 Tablespoons of nonpareil capers
  • 4 large pieces of Heavy Duty Foil, about 18” long

DIRECTIONS

  1. Season both sides of each piece of rock fish with about one Tablespoon of Londonderry Spice Rub.
  2. Place a teaspoon of Extra Virgin Olive Oil and a one tablespoon pat of butter on each piece of foil.
  3. Top each piece of butter with 4-5 thin Slices of lemon.
  4. Top lemons with a piece of Rockfish.
  5. Scatter one Tablespoon of capers over each filet of fish.
  6. Make the envelopes by folding up the edges of each foil sheet, forming an envelope, making sure they are completely sealed.
  7. Prepare the grill for indirect heat (half of the grill is on, the other half off). Make sure to close the lid on grill.
  8. When the grill is hot, place the purses on the half of the grill that is off and close the lid again.
  9. Cook the Rockfish envelopes for about 10-15 minutes, until the fish is opaque and cooked through. Times will differ depending on thickness of filet.
